About making low carb pita chips
Slice pita bread into any desired shape. Pie-shaped is quite popular but block-shaped has more corners. The more corners and smaller the shape, the quicker the chips will crisp up in the air fryer.
These air fryer pita chips are quick to burn. After spreading them out in a single, non-overlapping layer, air fry them for 2 minutes. Once 2 minutes passes begin watching to ensure the chips crisp up and do not burn; remove once they begin to discolor a bit. This time could range from 30 seconds to 1 minute.
There are also a few choices for seasoning the chips, either:
- Carefully spray or toss chips with oil and seasoning after air frying for 3 minutes; then air fry another 30 seconds to 1 minute, all the while watching to ensure the chips do not burn.
- Toss the chips with oil and seasoning after they crisp up in the air fryer.

- 1.5 tbsp lemon juice
- 2 tbsp tahini
- 1-2 tbsp olive oil
- 1/4-1/2 tsp salt or to taste

Instructions
Make the pita chips:
In a coffee grinder or similar instrument, grind McCormick seasoning and sugar into a fine powder.
Separate both sides of each pita bread using a scissor. Cut each side into 1” wide strips; and then cut strips into about 1x1.5”blocks.
Lay pita chips down in one layer in the air fryer basket.
Air fry at 350 for 2-4 minutes.
Remove and toss with oil and seasoning.
Make the baba ghanoush dip:
Split one small eggplant in half. Rub oil lightly on both sides of each half everywhere.
Place eggplant skin side up in air fryer. Air fry at 350 for 15 minutes.
Remove eggplant. Skin will be crispy. To remove the skin, allow eggplant to cool covered in a bowl. Once cooled, peel the skin off.
In a bowl or blender, add eggplant, tahini, lemon juice, pressed garlic, salt, olive oil and water. Hand whisk or blend well into a paste. There may be more fibers hand whisking.
