Another way to enjoy taro and oats – two popular ingredients worldwide, taro overnight oats has a sweet, creamy, nutty and starchy taste that borders on dessert deliciousness.

Ingredients for Taro Overnight Oats

Rolled oats – Use any oats. Quick oats are cut finer and may be easier on younger kids.

Why we love oatmeal: Oatmeal lowers bad cholesterol (LDL) and blood sugar levels, contains avenanthramides (anti-inflammatory, antioxidant, anti-itch and antiatherogenic effects), provides fiber and aids healthy gut bacteria which influences immune health.

Taro  Taro or malanga are both fine to use. They are roots I use interchangeably in recipes. For how to cook taro/malanga using the instant pot or by boiling, go here.

Why we love taro: Taro boosts the immune system, balances sugar levels, is rich in vitamin C, vitamin B6, vitamin E and minerals, such as manganese, potassium, copper, phosphorus and folate.

Seeds – Flax seeds, chia seeds, hemp hearts or other healthy additions.

Garnishes of choice – There are numerous possibilities. Some ideas are: fruits, nuts, nut butter, coconut flakes, white chocolate chips, spices, vanilla extract, jam, protein powder, coffee, ube powder, etc.

Milk – Any choice of milk, whether dairy or dairy free are fine. Other options might be green tea combined with milk or Greek yogurt combined with milk.

Honey or brown sugar to taste – Use any preferred syrup, sugar or substitutes. Many folks, including my husband, prefer lots of brown sugar over honey.

Another way to enjoy taro and oats – two popular ingredients worldwide, taro overnight oats has a sweet, creamy, nutty and starchy taste that borders on dessert deliciousness. Eat the taro and oats mixture immediately or leave it to marinate overnight in the refrigerator.

Ingredients

  • 1/4 cup oats
  • 2 tsp honey or brown sugar/substitute to taste
  • 1/3 cup loosely packed, mashed, cooked taro
  • 1/2 cup milk of choice (or 1/4 cup milk + 1/4 cup tea, or 3 tbsp. Greek yogurt + 6 tbsp. milk)
  • 1/4 tsp flax seed or chia seeds
  • Garnishes of choice: fruits, nuts, nut butter, coconut flakes, chocolate chips, spices, vanilla extract, jam, protein powder, coffee, ube powder, etc.

Instructions

(Optional) In a metal mixing bowl, add milk and taro. Blend until smooth using an immersion blender.

In a cup or jar add all ingredients, including the blended milk and taro mixture. If necessary, add more milk to ensure the ingredients are well covered and the surface is smooth.

Stir and mix the cup/jar contents thorougly.

Cap or cover the cup/jar with plastic wrap and refrigerate from 3 hours to no more than 2 days.

To eat, uncover and garnish with desired toppings. Top off with more milk if the overnight oats mixture is too thick.
