Ingredients for Cumin Ground Lamb

Five spiced tofu – The package should clearly spell out “five spiced tofu”; any other tofu might significantly alter the dish. Using the whole pack (usually 12 oz.) can seem overwhelming for the dish, but having a half pack lingering in the refrigerator too long can spoil quickly.

Garlic chives – Different from onion chives, which are missing the flowery bud on one end, garlic chives pair well with celery, which has a similar, refreshing crunch.

Ingredients

  • 1 lb minced lamb
  • 6-12 oz five spiced tofu, diced
  • 4 garlic cloves minced
  • 1 tsp ginger grated
  • 1 tbsp + ¼ tsp ground cumin
  • ¾ tsp Sichuan peppercorn powder
  • ¼ tsp black pepper
  • 1 tsp sugar
  • 1 tbsp + 1 tsp soy sauce
  • ¼ cup garlic chives, diced
  • ¼ cup celery, diced
  • 3 scallions/green onions diced, white and green parts separated
  • Salt to taste

Instructions

In a large skillet over medium-high heat, partially cook the five spiced tofu and ground lamb, breaking it up into pieces. Discard any juices, fats, or impurities that arise during cooking.

Lower the heat to medium. Add the garlic, ginger, white parts of scallions, and seasonings (cumin, Sichuan peppercorn powder, black pepper and sugar). Continue breaking up the meat, while incorporating all the spices.

Add the chives, celery and green parts of scallions. Stir and sauté until cooked and crisp. Add the soy sauce and stir. Taste to season with salt.

Serve with rice, bread, noodles, leafy greens or choice of side.
