This is a pretty straightforward soup; and good for when you are in a rush. It can be a simple dump and run, or, you can sauté the ingredients first before beginning the pressure cook cycle.

Miso Red Cabbage Soup (Instant Pot)
A quick and easy soup that agrees with most kids and family. Dropping in miso, banana and apple sweetens this unique, umami flavored soup.
Ingredients
- 2 cups red cabbage, chopped
- 1 clove garlic, minced
- ½ cup red onion, chopped
- 1.5 cups water or other broth
- 1 banana, chopped
- 1 tbsp. miso
- ¼ tsp salt
- 1 apple chopped
- ½ tsp oregano
Instructions
In the pressure cooker pot, add water and miso. Stir to dissolve miso well.
Add remaining ingredients into the inner pot: red cabbage, red onion, banana, salt, apple and oregano.
Close the lid and pressure cook on high pressure for 20 minutes with a full natural release (about 10 minutes).
Carefully remove the inner pot with gloves. Set the pot aside to cool.
Once cooled, use an immersion blender to puree ingredients into a creamy soup. Or, transfer the pot’s contents to a blender and blend until smooth.
Notes
It is possible to sauté step 2 ingredients, using the instant pot’s sauté mode, before adding the water and miso mixture.
