Air Fryer Mushrooms

Meaty, crisp and yet tender, with a salt and pepper coating, these healthy air fryer fried mushrooms are air fried with minimal oil and a light coating of tapioca starch.

Ingredients for air fryer mushrooms

Mushrooms to use – Enoki, seafood, king oyster mushrooms, and any varieties that have a similar texture. Seafood mushrooms, featured here, have larger mushroom caps that air fry slower than enoki.

Mushrooms offer several nutritional benefits. They are low in fat, carbohydrates, and contain riboflavin (vitamin B2), niacin (vitamin B3), pantothenic acid (vitamin B5), selenium, ergothioneine, copper, potassium, and beta-glucans. According to the mushroom council, they are also one of the few foods that also contains vitamin D.

Tapioca flour – Also used for making chili chicken, tapioca flour is gluten free. A lower carb option is chickpea flour, which has a natural, earthy flavor of its own.

Alternatively, these mushrooms are still delicious air fried with just a dab of oil and seasoning — without the tapioca flour. Quick, easy and still satisfying!

How to make air fryer mushrooms

1. In a small bowl mix together the salt, white pepper, Sichuan peppercorn powder and paprika seasonings.

2. Line an air fryer basket with parchment paper. Sprinkle seasoning over the parchment paper.

3. Slice just enough root off the mushrooms so they remain connected. Brush off any dirt detected. Most mushroom gurus advise against washing mushrooms, but if you do, pat them very dry. Damp mushrooms air fry less well than dry mushrooms.

4. Section the mushrooms into small 1/2”x1/2” bundles. The bunches resemble fat French fries this way; however, there are other approaches to dividing the mushrooms – horizontally into sheets or vertically into thicker clumps. Larger bundles usually entail less tapioca starch.

If the mushrooms break up while slicing and segmenting them, gather them into small bunches.

5. Pour tapioca starch onto a large, flat plate. Optionally, mix in a pinch of seasoning.

6. Baste mushrooms with liquid egg white wash so more tapioca starch can adhere better. Next, either lightly roll each mushroom bunch in tapioca starch or dust with tapioca starch. Only a thin layer is necessary.

7. Lay the mushroom pieces on the parchment paper; baste the tops with minimal oil and sprinkle generously with seasoning.

8. Air fry at 375F for 6 minutes. Flip each bunch, sprinkle further with seasoning, and transfer directly to an air fryer basket. Air fry at 375F for another 6 minutes. Discarding the parchment paper and moving the mushrooms to the air fryer basket mid-way is optional, but allows for extra air circulation.

Ingredients

  • 150g seafood mushrooms (read blog)
  • 1/3-1/2 cup tapioca flour
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • 1/8 tsp Sichuan peppercorn powder
  • 1/8 tsp paprika
  • 1 tbsp. oil
  • 2 tbsp. liquid egg white

Instructions

Make the seasoning. Mix together salt, white pepper, Sichuan peppercorn powder and paprika.

Line an air fryer basket with parchment paper. Sprinkle seasoning over the parchment paper.

Slice bottom root off mushrooms, leaving enough stem so the mushrooms remain connected if possible. Gently wipe off dirt or if washing, gently wipe them dry.

Split mushrooms into bunches about ½” x ½” thick.

Pour tapioca starch onto a flat plate. Mix with a pinch of seasoning (optional).

Baste each mushroom bunch with liquid egg white. Then roll each mushroom bunch in a thin layer of tapioca starch; or, dust with tapioca starch.

Place mushrooms onto the parchment paper. Baste tops of mushrooms with minimal oil and generously sprinkle with seasoning.

Air fry for 6 minutes at 375F, flip, season tops of mushrooms further and air fry another 6 minutes at 375. Optionally, to allow extra air circulation, remove the parchment paper and transfer mushroom bunches to the air fryer basket after flipping.

Serve with remaining seasoning if necessary.
