Garlic Cauliflower Soup

Creamy and healthy, with a slight essence of mashed potatoes, this soup is super quick and easy, and best of all – everyone likes a garlic butter sauce!

Tips on how to make garlic cauliflower soup

A small amount of butter is used for this recipe, but if desired substitute butter for a high-temperature oil.

Blender to use: An immersion blender is a favorite soup-making tool, but it may not catch each and every garlic piece. A Vitamix blender, on the other hand, will produce the smoothest and creamiest soup!

Stock to use: vegetable, chicken or any stock.

Taste, very carefully, to add seasoning. If the soup seems too watery, place instant pot on saute mode to boil off excess water, stirring occassionally, to thicken up the soup.

An optional add-in: 1 tsp parsley flakes before pressure cooking.

Ingredients

  • Garlic sauce
  • 1 tbsp. butter
  • 6 cloves garlic sliced
  • 1 green onion diced
  • ¼ tsp salt
  • Cauliflower soup
  • 1 tbsp. oil
  • 1/4 onion diced (½ cup)
  • ½ head cauliflower chopped into florets (2.5-3 cups)
  • 1 2/3 cups broth
  • Garnish: fresh Cilantro, basil or parsley

Instructions

Make the garlic butter sauce. In a nonstick skillet over low heat, place butter, garlic, green onion and salt. Cook until butter has melted and ingredients have soaked up salt and butter.

Set instant pot to saute mode. Once hot add oil, onions and cauliflower. Stir until onions are translucent.

Pour stock into instant pot.

Close and lock the lid. Set to hi-pressure cook for 7 minutes with a quick release.

Allow the inner instant pot to cool (carefully remove inner pot using mittens or leave to cool inside instant pot).

Once cooled add garlic butter sauce, including any residual butter. Use an immersion blender to liquefy until smooth. If using a Vitamix or blender, transfer soup and blend until smooth.

Remove, garnish with cilantro and serve.
