A simple and easy way to hide that morning egg in a tasty applesauce/banana and egg pancake muffin. Kept small with minimal flour filler, these bite-sized applesauce/banana and egg pancake muffins are perfect for kids, enticing them to finish their egg without even knowing it.

These egg and fruit air fryer muffin concoctions turn favorite kids pancakes into easy, speedy air fryer muffins. While banana pancakes are common finger foods for toddlers and kids, applesauce pancake batter is incredibly runny and difficult to pan-fry without additional flour. And more flour can sometimes equate to unfinished pancakes for kids.

Air frying egg and applesauce/banana batter is super simple using silicone baking cups. Pour the batter into baking cups, pop them into the air fryer for about 11-12 minutes at 325F and check that the temperature exceeds 190F before removing. Gone are the days and time spent pan-frying a banana/applesauce pancake!

Ingredients for Applesauce/Banana and Egg Muffins (Air Fryer)

Whole milk (optional): Provides a creamier egg muffin; other possible substitutions are low-fat milk or any yogurt. Not recommended for applesauce muffins because the batter is runny enough.

Coconut flour: Use any flour of choice, but for inedible flour, be sure to measure the temperature to ensure the flour has cooked (I look for 190F for all-purpose flour). Coconut flour has great absorbent properties and oat flour is high in fiber (to make, blend oats in a food processor until they turn into a fine flour).

As a note, there is minimal flour utilized for these muffins. Eggs hold everything together, but feel free to add another teaspoon of flour if desired. The applesauce muffins may be very moist or have some goop in the center.

Cinnamon (optional): Amps up the muffin’s taste. Other tasty spices: all spice and nutmeg.

Ground flaxseed (optional): Supplies omega-3 fatty acids, fiber and antioxidants.

Add ¼ tsp baking powder for more lift if desired, but not necessary.

Applesauce (for applesauce and egg muffins only): Use any store-bought applesauce or homemade applesauce. Store-bought often come as convenient 3 oz. portable, squeezable, snack-sized pouches. They even sell strawberry applesauce, banana strawberry, etc. to vary the muffins even more!

Equipment for muffins

  • Cuisinart® Digital Air Fryer Toaster Oven — heats food up extremely quickly
  • Silicone baking cups – these are ideal because they do not require greasing and the muffins pop right out. One egg requires about 2 cups.

Ingredients

  • 1 egg
  • 1 teaspoon coconut flour or choice of flour
  • ¼ teaspoon ground flaxseed (optional)
  • pinch of cinnamon (optional)
  • For the banana combination:
  • 1/3 banana mashed
  • 1 tbsp. whole milk or choice of milk
  • For the applesauce combination:
  • 2 tbsp. applesauce
  • Sugar to taste (optional)

Instructions

In a mixing bowl, beat the egg and whisk in the flour, milk, salt, ground flaxseed, spices and fruit (banana/applesauce).

Pour batter into 2 silicone baking cups, about 2/3 full. Optionally, lightly sprinkle a bit of brown sugar over the tops.

Air fry for 11-14 minutes at 325 F or until the temperature reaches above egg (160F) and flour cooking temperatures. Allow to cool before serving.

Notes

There is minimal flour utilized for these muffins. Eggs hold everything together, but feel free to add another teaspoon of flour if desired. Expect a moist muffin for applesauce muffins.
