About making breaded mustard chicken
Breadcrumbs: Any kind are fine, but panko bread crumbs are typically my go-to; if they are too coarse, grinding them into a finer texture makes coating the chicken easier. Swapping out up to half the bread crumbs for grated parmesan cheese is entirely possible. Usually an extra 2-3 tablespoons of parmesan cheese, as a throw-in or substitute, goes undetected.
Dijon mustard: A favorite mix is Grey Poupon Dijon mustard with regular Dijon mustard but either will work our fine.
Chicken: For lower-fat chicken pieces, such as chicken tenders or sliced chicken breasts, brining is a helpful but optional step to keep them juicy as they air fry. Steps on brining chicken can be found here. The overnight yogurt-mustard marinade tenderizes the chicken so every bite is wonderful.

Breaded Mustard Chicken
Healthy and delicious chicken tenders marinated in yogurt, mustard and honey, then rolled in bread crumbs. A keeper for a home-cooked meal.
Ingredients
- 4 large chicken tenders
- 3 tbsp. nonfat Greek yogurt
- 1 tbsp. honey
- 1 tbsp. dijon mustard (I use 2 tsp grey poupon and 1 tsp dijon mustard)
- ¼ tsp garlic powder
- ¼ tsp salt divided
- ¼ tsp pepper divided
- ½ tsp paprika
- 1/2-3/4 cup breadcrumbs (see blog about using grated parmesan cheese)
- oil
Instructions
(Optional, but recommended) Brine chicken before marinating in yogurt-mustard sauce.
Make the marinade: In a re-sealable bowl, combine Greek yogurt, honey, dijon mustard, 1/8 tsp salt, 1/8 tsp pepper, and garlic powder. Add chicken tenders and coat them well in the marinade. Refrigerate overnight.
Prepare the breadcrumbs. In a shallow dish mix breadcrumbs with 1/8 tsp salt, 1/8 tsp pepper and paprika. Optionally, toast breadcrumbs in a skillet with some oil (if incorporating parmesan cheese, add cheese after toasting).
Shake excess liquid off chicken pieces and roll them in the breadcrumbs. Place chicken pieces in an air fryer pan or baking pan. Air fry for 15 minutes at 350 flipping halfway or bake at 400 for 15-20 minutes or until the internal temperature reaches 165F.
