Lovely, quick and easy turkey sausage for breakfast, brunch, or any meal of the day. Enjoy separately, crumbled up, or sandwiched between your choice of “bread” and garnishes.

Turkey sausage isn’t just for patties, but can also be:

  • Turned into sausage links
  • Crumbled up in a skillet
  • Baked with vegetables, bread or pasta
  • Added to pizzas and more

For added heat or more of an herby, earthy flavor, incorporate additional seasonings such as Italian seasoning, rosemary and red pepper flakes.

Some ideas for serving turkey sausage

Sandwich between:

  • Biscuits, English muffins, croissant bread, bagels
  • Lettuce, egg white omelet wrap, stuffed into hollowed out squash
  • Tortilla, pita bread
  • Baked with crescent dough

Serve alongside or incorporate into:

  • Pancakes, toast, waffles, corn bread
  • An egg bake, scrambled eggs, fried egg
  • Hash browns or fries
  • Salad, pasta salad, vegetables, kale, onions and bell peppers
  • Mushrooms, beans
  • Macaroni & cheese, pasta

Lovely, quick and easy turkey sausage for breakfast, brunch, or any meal of the day. Enjoy separately, crumbled up or sandwiched between your choice of “bread” and garnishes.

Ingredients

  • 1 lb. ground turkey
  • 1/2 tsp salt or to taste
  • 1 tsp fennel seeds, ground
  • 1/2 tsp black pepper
  • 1.5 tsp ground coriander
  • 1/4 tsp paprika
  • 1/2 tsp sage
  • 1/2 tsp marjoram
  • 1 tbsp. maple syrup or honey (optional)
  • 1 tsp oil
  • seasoning: salt and pepper

Instructions

If necessary, grind up fennel seeds using a coffee grinder or similar equipment.

In a mixing bowl combine salt, ground fennel, black pepper, ground coriander, paprika, sage and marjoram.

In a large mixing bowl, add ground turkey. Sprinkle seasoning mixture over turkey. Add maple syrup or honey if using. Gently mix turkey and seasonings together, keeping the meat mixture loose without squeezing.

Using wet hands loosely form 8 round patties without pressing or squeezing them.

Warm a griddle or non-stick pan over medium-high heat with 1 tsp oil. Place patties on a lightly seasoned griddle/pan. Season the tops of patties and fry on both sides. Remove a patty only when its internal temperature reaches 170F (165F is the minimum temperature for poultry). Repeat in batches as necessary.

Notes

Optionally, add red pepper flakes for more heat.
