Notes for Taiwanese Chicken Wings

Consider brining the chicken wings before air frying them because some parts can cook faster than others. Refer to the “How to Brine Meat” post for a standard brining procedure.

Tasty and healthy, these air fryer Taiwanese-style chicken wings are quick and easy. Think of them as light Taiwanese popcorn chicken but without the batter!

Ingredients

  • 1.5 lb chicken wings
  • 2-3 large garlic cloves minced (or 1/2 tsp garlic powder)
  • ½ tbsp soy sauce
  • ½ tbsp oyster sauce (optional)
  • ½ tbsp five spice powder
  • ¼ tsp white pepper
  • ½ tsp garlic salt
  • ¼ tsp salt
  • ¼ tsp peppercorn powder
  • 2 teaspoons oil

Instructions

1

Wash chicken wings and pat them dry. Separate wingettes from drumettes.

2

In a large bowl, toss chicken wings with minced garlic, soy sauce, oyster sauce, five spice powder white pepper, garlic salt, salt, peppercorn powder and oil. Use a fork/knife to prick/score the chicken in multiple spots to infuse the marinade. Allow to marinate refrigerated for 1 hour but no more than 24 hours (optional).

3

Transfer chicken wings to the air fryer basket and arrange wingettes skin side down and drumettes meaty side up. Air fry at 375F for 12 minutes, then 3 minutes at 400F, flip over and continue air frying at 400F. Remove wingettes when they reach 175F internally, about 4-5 minutes. Remove drumettes when their meaty parts reach 175F internally, about 5-6 minutes.

Notes

Brining the chicken beforehand and marinating the chicken are optional steps that enhance the taste but take extra time.
