Asparagus rice is an unconventional way to eat asparagus that differs from oven roasting, steaming or stir-frying. Asparagus rice is palatable for small kids, low in calories and a great source of nutrients and fiber!
This is one of my favorite asparagus recipes! It tastes great, kids can eat all parts of an asparagus stick and the dressing is worked into every bite.
Can you cook asparagus rice on the stove?
Yes, but it will be mushier since asparagus has locked-in moisture. Cook asparagus over medium-high heat until tender, slightly crisp and a beautiful green. It is a very quick stir-fry, just a few minutes.
Equipment used
- Cuisinart® Digital Air Fryer Toaster Oven. It heats food up fast; I almost never preheat.
- Food processor
- Baking pan for air fryer or oven
How to make asparagus rice
To prevent additional moisture, pat the asparagus dry. Roughly chop the asparagus. Place asparagus in a food processor and pulse into tiny pieces.
Season the asparagus with salt, black pepper and garlic powder and toss with oil. Spread the asparagus pieces on a baking pan in a thin layer. If using an oven, bake at 350F for 12-15 minutes; for an air fryer, air fry at 250F for 10 minutes or for a bit of char, 275F for 10 minutes.
Air frying is slightly more fragrant than baking, but requires cooking in batches for larger amounts.
Remove and serve with honey lemon dressing or vinaigrette.
Asparagus Rice

Ingredients
- 1 lb asparagus
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 teaspoons high-temperature oil
- For the dressing:
- Juice of 1/2 lemon
- 1-2 teaspoons honey
Instructions
If wet pat the asparagus dry. Cut off the woody stems and roughly chop the asparagus. Pulse the asparagus a few times in a food processor, breaking into tiny pieces. Repeat in batches if necessary.
In a bowl toss the asparagus with oil, salt, black pepper and garlic powder.
Cook the asparagus. Air fryer way: On a baking pan, spread the asparagus in a layer. Air fry for 10 minutes at 250F or for 10 min at 275F for a little more char. Cook in batches if necessary. Baking way: Preheat oven to 350 F. On a baking pan, spread asparagus around in a layer. Bake for 12-15 minutes.
Make the dressing: Combine lemon juice and honey; stir to blend well.
Serve with honey lemon dressing on the side.
Notes
Add parmesan cheese if desired. Once done roasting, sprinkle grated parmesan cheese over the asparagus and let it melt before removing and serving with dressing.
